Egg Free Waffles with a Log Cabin Box Mix

If your egg free due to allergies or personal reasons, you know that when shopping for foods or baking, it can deem itself pretty difficult.  If you find something that doesn’t contain eggs, chances are it probably requires you to add eggs.  However, if you’ve ever had the opportunity to experiment with a boxed mix and an egg replacer, you’ll know that it’s truly a science experiment that can go either way.  Tasty or not so much.  I’ve bought several different boxed mixes and tried out the egg replacer and had horrible results.  I really gave up and decided that scratch baking was the only method to go with. Until….

Kelsie loves waffles, I have yet to find a recipe that doesn’t require an egg to make them. I decided one afternoon while doing some shopping to just grab a box and go with it.  I went for the one that looked like it contained the most “real” ingredients and wasn’t processed in a place that would have cross contaminants, that just so happened to be Log Cabin. However, don’t let their “no high fructose corn syrup” fool you on their syrups.  They do contain corn syrup, just not of the high fructose kind!  Why put corn syrup in it at all?!  But that’s not why your here.

Egg Free Waffles with a  Log Cabin Box Mix

Your gonna make this waffle recipe exactly like the box says, except your going to replace the “egg” with a flax egg.  One tablespoon of ground flax seed and 3 tablespoons of water.  Mix it up first and let it sit while your getting other things ready for your waffles, like your syrup, butter, plates, forks, etc.  You want it to gel up.

Your waffles turn out fluffy and just exactly like they would have if you had used an egg.  I know this because I also made one batch with a real egg for the rest of us.

Egg Free Peanut Butter Blondies with Chocolate Chips – Vegan Adaptable

Peanut butter is a staple in our home.  We always have a jar around because between peanut butter and jelly sandwich’s, peanut butter crackers (or graham crackers), and just plain ol’ peanut butter on a spoon, we kind of run out, a lot.  It’s just yummy, filling, and if eaten in moderation, it’s good for you.

This recipe is sweet, peanut buttery, and decadent.  Perfect for all peanut butter lovers out there!

Peanut Butter Blondies with Chocolate Chips - Vegan Adaptable

What do you need?
1/2 cup creamy peanut butter – we used Peanut Butter Co.
1/3 cup butter, softened – to make it vegan, use your favorite substitute
2/3 cup sugar
1/2 cup packed brown sugar
2 tablespoons ground flax
6 tablespoons water
1 cup all purpose flour
1 tsp baking powder
1/4 tsp salt
1/2 tsp vanilla
1 cup semi sweet chocolate chips – we used Enjoy Life Brand

What do you do?
1. Preheat oven to 350 degrees and grease a 9X9 inch baking dish.
2. Mix together your ground flax and water, set aside to make eggs.
3. In one bowl mix together your flour, salt, and baking powder, set aside.
4. In a large bowl cream together your sugars and butter.
5. Add your eggs and vanilla.
6. Mix together until just combined. (I think the key is not over mixing when using flax “eggs”)
7. Slowly add your flour mix to your peanut butter, mix until combined, remember not to over mix.
8. Stir in your chocolate chips.
9. Spread your mixture into a baking dish.
10. Bake for 30 to 35 minutes or until a toothpick comes out clean.

Allow to cool completely. Cut into squares and enjoy!

5 Ingredient Banana Pudding Ice Cream

When it comes to buying ice cream with a kid who has food allergies, it’s hard. Eggs and tree nuts are amongst almost every ice cream brand you come across.  We have found one brand that is allergy friendly and we do purchase it, however it’s just plain jane vanilla.  Nothing wrong with plain vanilla, but let’s face it, kids want something different from time to time.  I ran across an ice cream recipe once that was so easy to make, you start with a few basic ingredients and then add to it to make the flavor profile your looking for.

5 Ingredient Banana Pudding Ice Cream

What do you need?
2 cups heavy whipping cream
1 can sweetened condensed milk
2 tsp vanilla flavor
2 ripe bananas, one sliced and the other quartered
1 cup chopped vanilla wafers (Back to Nature brand is very allergy friendly)

What do you do?
1. Beat the heavy whipping cream until it’s stiff.
2. Fold in the sweetened condensed milk.
3. Put into your ice cream maker.
4. Right before it’s finished, throw in the quartered bananas.
5. When it’s finished, put into your freezer safe container.
6. Sprinkle the bananas over the top and then stir in.
7. Sprinkle all but about 1/4 cup of the vanilla wafers on top and stir in.
8. Sprinkle with the remaining vanilla wafer crumbs.
9. Cover and freeze for at least 2 hours.

Chicken Sausage Skillet Dinner

With school starting back in less than 2 weeks, I am trying to get all my recipes together that are quick, easy, and cheap!  I don’t know about y’all but with school, comes dance, and with dance comes money around here.  Anytime I can save money on food, and not skimp on flavor, and still stay within Kelsie’s food allergies, I am one happy momma!

This is a meal that we eat a lot around here and the fact that most of you usually have all of these ingredients on hand (except maybe the sausage), I’ll call it cheap!

Chicken Sausage Skillet Dinner

What do you need?

6-7 medium sized potatoes
1 medium onion
1 package of Chicken Sausage (We used Applegate Chicken & Apple, you could use any of your favorite, it doesn’t have to be chick)
1 teaspoon salt
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon onion powder

What do you do?
1. Heat your oven to 400 degrees. While it’s warming up, peel, wash, and cube up your potatoes.
2. You can either grease your baking sheet, or line it with parchment paper.
3. Either way, lay your potatoes out on your baking sheet. Drizzle them with olive oil and toss to coat.
4. While your potatoes are baking slice your onion into thin strips.  (they usually take about 18-20 minutes, I turn mine over half way through, but if your in a rush, it’s not necessary)
5. Slice your sausage into about 1/4 inch thick.
6. Heat a large skillet to medium heat, drizzle with some olive oil and throw the onions in.
7. When your onions are about half way cooked through, toss in your sausage. At this time throw in all your spices and stir them in. 8.Cook until the onions are finished and the sausage is a little brown.
9. Toss your potatoes in when they are browned.

Now sit back and enjoy your meal! I usually pair this with green beans or a side salad. You can pair it with your familys’ favorite vegetable.
